Description

The most popular New Orleans candy, are made from Louisiana's top commodities, pecans and sugar. Pralines derive their name from the French Marshall Cesar du Plessis-Praslin (1598-1675), who habitually offered almonds coated in cooked sugar, and his amorous intentions, to famous women. Later, when the French settled in Louisiana, native pecans were substitued for the almonds, and sugar made from Louisiana sugar cante was used to produce a unique Louisiana confection.
